Little Burradoo Chefs

At La Gemme Estate recently on a weekend away we got to meet Christel and Bianca, the duo behind the Southern Highlands-based Little Burradoo Chefs. How gorgeous is their brunch set us up featuring our Green Soft Scallop Collection, full of fresh ingredients from their own local garden.

How important is plating and presentation when you put your dishes together? 
Presentation is everything, the eyes eat before the stomach. With our famous grazing tables we love to use different elevations to display the food and flowers are a must. Oh and I can't forget about plate perfection with all the details like the In The Roundhouse collections!

Sweet or savoury? Savoury. We're cheese addicts at heart!

Go-to comfort dish? Christel's Honey, Soy Chicken with Creamy Mash & Broccoli. It's a family favourite.

A food trend you love? 
We love food with a touch of theatre, it becomes an experience, not just a boring table setting. Fire cooking is so inspiring. We do it a lot with our family around the outdoor firepit using good-quality produce direct from the local farms. We believe relaxed dining atmospheres will replace formality, with comfort foods continuing to grow in popularity.
